Need to Determine "Email Retrieval Method"

Setting up a new Exchange box that will mirror image the settings of the old one. For complicated reasons they can't be connected to the same network to do a standard migration.
 
Am hung up in the Configure Email and Internet Connection Wizard on the new server. Where do I go on the old server to determine the Email Retrieval Method? As of now, I can't just re-run the wizard on the old server, beause DHCP is not set up on the old server and the wizard doesn't seem to want to run without it. Is the solution to reconfigure DCHP so I can run the wizard? Or is there a way in the Exchange System Manager to find it?
 
Running Exchange 2003 on SBS 2003.

open the exchange system manager , there is three main topics there, right click on each and add administrator to the exchange admin with full privs
now you need a tool called exmerge , this will then dip into all the mailboxs and export them from teh exchange as pst files, you can then make your mailboxs on the new server and send one mail to everyone this will initialise the mailbox, then exmerge them back in after you have done the same with admin and rights
